Pumpkin Time


Fall has to be my favorite time of the year - partly because of all of the pumpkin recipes going around. I love ANYTHING and EVERYTHING pumpkin (scented candles, soaps, food, etc). I am in the midst of loosing the baby weight right now so I am trying to be smart about not baking too many sweets. But now that I live in the south, I have adopted the habbit of baking things to bring over to people's houses. So my mind-set as been that baking for other people is more of a craft and for the act of baking rather than needing to eat it myself. That mind-set has really worked so far - especially because my little 3 year old guy loves to help me in the kitchen. At least I should say that it has worked until I discovered THIS PUMPKIN MUFFIN RECIPE. A friend told me about it and wow - it is good...AND it makes the whole house smell like a pumpkin spice latte. (I also think that these muffins won't contribute to the muffin top I am trying to loose because they are low fat and I think only 100 calories)

Pumpkin Muffins:

Ingredients:
1 box spice cake mix or carrot cake mix
1 15oz can pumpkin
4 egg whites or 1/2 cup egg substitute
2 tablespoons water

Mix all ingredients in a large bowl until creamy. Fill muffin cups. Bake at 350 degrees for 18-23 minutes.

PS: I didn't say that I bake things from scratch...I personally love that this uses a cake mix and canned pumpkin. It's a very fast and easy recipe...

we've made some incredible pumpkin scones around here...i blogged about it. you should try them too - though they're not as easy as your recipe!

i saw that on your blog and even passed it on to two of my pumpkin loving friends. :) it is on my list of things to bake SOON. i have just been pre-occupied with the super fast and easy recipes...
